  Overview

This introductory qualification is designed for learners to develop kitchen skills and health and safety awareness. To develop knife skills and preparation methods, the use of everyday ingredients and developing knowledge of how to use them. Making dishes and desserts for the college restaurant including cakes and pastries for the café bar. You will learn transferable and sector specific skills which will enhance your progression for future learning.

Each week you will prepare and cook dishes which have been demonstrated to you. You will be shown how to put ingredients together. You will be working in a professional kitchen using equipment and developing your individual skills for progression. You will have the opportunity for part time work experience trips, visits and guest speakers to help enrich your learning experience.

The course is based on a Programme of Study which consists of:

  • The Vocational Qualification itself
  • A City & Guilds Employability and Personal Development Award
  • Maths and English
  • A Tutorial Programme
  • Work Experience

Learners will study three core Employability units and three sector specific units over the duration of the course.


  Qualification Gained: City and Guilds of London Institute Award in Introduction to the Hospitality Industry

Each learner will work towards 3 PSD units:

  • Basic Cookery Skills
  • Understanding Commodities
  • Preparing Cakes, Pastries and Scones
  • Making Salads, Hot and Cold Sandwiches
  • Cooking Methods

Entry to this course requires GCSE English and Maths at grade 2 or above.

English and/or Maths will be included in your timetable if you have not achieved a GCSE at grade 2 or above in these subjects when you start your course.

You will be assessed through a range of methods that include coursework, assignments and presentations.

30 hours of relevant experience of work are included in the course. Our students work in partnership with the National Citizens Service (NCS) programme which helps to develop key employment skills and behaviours needed for progression to work.

Successful completion of this course means that you will be in a position to progress to a Level 2 course or into employment in the Hospitality industry.
